National Maple Syrup Day

Who’s up for a sweet treat? December 17 is National Maple Syrup Day here in Canada. It is pure magic and great on pancakes. There is nothing better then real Maple Syrup and we are known world wide liquid gold.

I wanted to share a recipe to make delicious pancakes from 2 ingredients – Banana and an egg. That’s it!!! Oh yeah I can’t forget to top it with the natural wonder that is Maple Syrup.

Ingredients
Medium Banana
Large Egg

Instructions:

  1. Mash up a very ripe Banana in a bowl. The more ripe the better.
  2. Add Egg and lightly beat
  3. You could add 2 sprays of Cooking Spray if you would like to.
  4. Cook and flip
  5. I added Maple Syrup that Kevin, a friend of ours, made himself.

To be honest it was very good, but but a little too juicy for me. I think that I will try to add 2 TBSP of Self-rising Flour to the next batch.

You can use this recipe in a waffle maker. You can the pancakes/waffles with fresh berries and a little bit of cinnamon.
